My older sister an I made a paleo bread New Year’s Day. I got to admit I was quite sceptic because it just seemed weird that the only thing it was made of is seeds, nuts, oil, salt and eggs, but it’s one if my favorite things at the moment with some fig pâté etc.
100g sunflower seeds
150g pumpkin seeds
100g sesame seeds
100g flax speeds
1 dl oil (of own choice)
1-2 tsp salt
Mix all the seeds together in a bowl. Chop the almonds fine, if you have a food processor use that, otherwise just use a knife – I like the almonds to be chopped fine but not to almond flour.
Whip the eggs together to a homogeny mass, add the salt and oil.
Pour the egg-mix over the seed-mix and stir it together.
Turn on the oven on 160•C. Have a bread-form ready and lay some baking paper in it. Pour the mix in the form and even it out. Place it in the middle of the oven and cook for 70 minutes.
