I really wanted something light and delicious today so I made my sister and me a quick salad.
1 green pepper
1 1/2 -2 handful spinach
1 glass grilled, oiled artichokes
Slice the eggplant and oil both sides with olive oil. Grill them on a pan until they’re soft and browned.
The pepper slices too and is putted on the pan with a bit salt, when the eggplant is done. While the pepper is grilling, cut the eggplant in quarters.
Wash the spinach and cut it roughly. Spoon out the avocado-meat and cut the apple in pieces. Put all in a bowl and mix it together. Add the now grilled pepper and the artichokes. Mix it and place on plates. Slice some tomatoes if wanted.
And so you’ll just dig in.
