Lentil soup – quick prep

I really wanted to make lentil soup, so I researched on the web for a good recipe, but in all of them you needed curry pasta or something else I didn’t have, so instead I decided to improvise which turned out like this:

It’s so incredible easy.

4-6 pers.

4 carrots
1 leek
1 1/2-2L water
4 fat garlics
1 big red onion
200g lentils (washed after package instructions)
2-3 tbsp olive oil
2-4 tbsp soy sauce
1 1/2 tbsp curry
1tbsp chopped coriander
1-2 tsp chili powder
Salt and pepper

Poor the water in a big pot. Chop all your veggies roughly and add all you ingredients in the water except the curry and chili.

Boil the mix until the veggies are soft. – add some salt an pepper.

When the veggies are soft take the pot off the stove and blend the mix to a creamy, homogeny mass, an thereafter place the pot back on the stove again. Here add the curry, chili powder and taste with salt and pepper. Let it boil, and the. Serve. How easy!

Hope you like.
